White Chocolate Oatmeal Cranberry Cookies

These are a relatively simple twist on oatmeal raising cookies!

We've added white chocolate, dried cranberries and a cranberry glaze to make these feel a little more holiday!

White Chocolate Oatmeal Cranberry Cookies
1 hour total (45 minutes cook • 15 minutes prep)
Ingredients
  • Cookies:
  • 14 tbsp butter (about 1 2/3 stick), softened
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 tsp Cranberry Dark Balsamic
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3 cups old-fashioned oats (quick cooking works too!)
  • 1 cup dried cranberries
  • 1 1/2 cups white chocolate chips
  • Glaze:
  • 1 cup powdered sugar
  • 1/2 tsp Cranberry Dark Balsamic
  • 1/2 tbsp water
  • few drops red food coloring
Instructions

Preheat oven to 350F.  In a large bowl, add butter and sugars and use a mixer (hand or stand) to mix until creamed together.  Add eggs, vanilla and Cranberry Dark Balsamic and mix well.

In a small bowl, combine flour, baking soda and salt.  Add to the butter/sugar mixture and mix well. 

Add oats and mix on low speed until mostly incorporated into the batter.  Add cranberries and white chocolate chips; using a spatula or your hands, mix together.

Using two spoons, drop about a tablespoon of cookie dough onto baking sheets about 2 inches apart.  Bake for 8-10 minutes or until lightly browned around the edges.  Let the cookies set on the baking sheet for a few minutes, then move to a cooling rack.  Let cool fully before adding glaze.

Glaze: combine sugar, Cranberry Dark balsamic, water and red food coloring together in a bowl and whisk until smooth.  To minimize the mess, move cookies to a piece of wax paper or a clean baking tray - drizzle the glaze over the cookies decoratively.  You can do this by either putting small amounts on a spoon and waving over the cookies OR place the glaze in a ziptop bag, cut a very small hole in the corner and drizzle it like an icing bag.
