Sweet Potato, Black Bean & Chorizo Chili
I feel like I could eat chorizo every day. Not that I NEED to eat chorizo every day but I just think it's that dang good!
The beauty of this chili is that a good amount of the flavor comes from the chorizo. We're enhancing a few of these flavors with additional spices but this chili is warm and inviting, exactly what you want on a brisk fall or winter day. Or heck, we ate this over the summer and it was still satisfying!
- 1 lb ground chorizo
- 1 large onion, diced
- 1 large sweet potato, peeled and diced
- 40oz black beans, canned or pre-cooked
- 29oz can tomato sauce
- 3 tbsp Vegetable Better Than Boullion
- 3 1/2 cups water
- 1 tbsp granulated garlic
- 1 tbsp kosher salt
- 1 tbsp smoked sweet paprika
- 1/2 tsp Chipotle Meco Chile Powder
- 1/2 tbsp Ground Cumin
In a large pot, add ground chorizo and cook over medium low heat. Once cooked, add the diced onion and increase heat to medium. Cook, stirring occasionally, for about 5 minutes or until onions have started to become translucent.
Add all remaining ingredients to the chorizo and onions; cook over medium heat, stirring occasionally, for about 30 minutes or until sweet potatoes are tender.
Serve with shredded cheese, sour cream, guacamole or any preferred chili toppings!
