Blueberry Lavender Simple Syrup
The best part of this simple syrup is that you end up with 2 separate dishes out of it!
The syrup uses fresh blueberries but once they are cooked you are left with both the simple syrup AND a lovely cooked blueberry compote or jam that is perfect for a cheese board.
Having a party? Make this simple syrup for a pitcher of lemonade or iced tea and use the blueberry compote on a charcuterie board or over a block of cream cheese for an easy appetizer.
- 4 oz blueberries
- 1/4 cup Lavender White Balsamic
- 1/4 cup sugar
- 1 cup water
In a medium saucepan, add blueberries, Lavender White Balsamic, sugar and water. Bring the mixture to a boil and cook for about 5-10 minutes or until blueberries are very soft. Using a spoon, press some blueberries against the side of the pot to flatten them.
Put a strainer over a mason jar and pour syrup through it, gently pressing the blueberries to extract as much liquid as possible. Move blueberries to a container and place both in fridge until ready to use.
For Blueberry Lavender Iced Tea, mix about 1 part simple syrup to 12 parts iced tea but you can adjust based on how intense you want the blueberry flavor. Serve cold or over ice.
Again, save the blueberries!! You can put these over ice cream, yogurt, cheese or just straight up eat them with a spoon.
You can also make this recipe with our Lemon White Balsamic if you're not a fan of lavender but I encourage you to give the lavender a try!
